Kimchi Jjigae, Sundubu Jjigae

Like production management, high turnover of table is an important factor in restaurant business success. Have you heard about Korean traditional fastfood restaurant? It is Ttukbaegi house. The ttukbaegi is a kind of earthenware bowl. Normally fastfood restaurant serves junk food, but here is different and close to healthy food.

There is Quiznos near the Jong-ro 2nd street cross. When you enter road between Quiznos and Rolling Pasta, there is the “Ttukbaegi House” on the right side.

There are some people waiting for. But not many as we expected. Because the turnover ratio is high.

When you go inside, you may be surprised of a lot of earthenware bowls, ttukbaegi. They are on the fire, or waiting for their turn. There are more hidden ttukbaegies right side.

Once seated, the restaurant staff will bring you basic food like as below left side.

These will be served basically no matter what you order among the four dishes. At the same time you will be asked your order. In the white box menu list, there are four ttukbaegies you can choose. From top to the bottom, they are…

  1. Ureong doenjang jjigae (kind of soybean stew, edible snail added – good for man)
  2. Doenjang jjigae (soybean stew)
  3. Sundubu jjigae (silken tofu stew. Tofu is very very soft and mild taste, and soup is a little bit hot)
  4. Kimchi jjigae (Kimchi stew with pork)

When you order, you will receive the stew(jjigae) in a few seconds. While you are waiting for, you can eat some rice with the side dishes, or you can make bibimbab. By using spoon and chopsticks, you can add kimchi, radish dressing, bean sprouts dressing to the bowl of rice.

On the table, there will be red pepper paste, and radish dressing. You can adjust the amount of red pepper paste to adjust seasoning and mix to eat.

I recommend sundubu jjigae and kimchi jjigae. The left is sundubu jjigae. In my opinion, the taste of Korean tofu is different from those of other countries. We do not spend much time to make tofu, and the brine used to make tofu is purified. So, you can enjoy soft and mild taste of silken tofu stew. Anyway, I recommend sundubu jjigae.

And also there is kimchi jjigae. The taste is the same what I often taste at home. A little bit hot, but it’s ok. Deep taste of soup is nice.

Both are good enough to keep your stomach full and warm. The price is quite competitive compare to other near restaurant in the center of a city also. It includes bibimbab and stew.

But I told you here is the Korean fastfood restaurant. There is no problem when waiting guests are not exist. But if many people are waiting for, the employee glances the people eating. And then she (normally she) open the door, and speaks to the waiting guests with a little bit loud voice,

“How many people?”

I start to find a glass of water.. Once again she glances the tables and then speaks again.

“Two people? Wait for a second.”

The “Wait for a second” has two meanings. She glances again shortly. This is how they are succeed.

Delicious + Generous + High turnover ratio = Success

People pay the bill, feeling relieved that they have come to a delicious restaurant, even though they become a little busy.
