Bossam and Soba Noodles

In Seoul city, there is a famous way called ‘pimatkil’. That way was for normal people, not for King nor high class public servants in the past of Josun dynasty. High class people used Jong-ro way and they had lunch and dinner in their palace. How about normal people? They came to ‘pimatkil’ to eat.

As you can see above, the main street Jong-ro for king and high class public servants is very wide. But all the other people should walk through the red lined narrow way with crowd of other people.

In these days, because of reconstruction of this area, many traditional and tasty restaurants closed but some restaurants continues on sales. One of the survived restaurants is Mijin.

A little bit old fassioned green and yellow colored signs are welcoming us. Maybe the buckwheat and its flowers’ color will be that colors.

I ordered one bossam and one buckwheat noodle.

This is ‘bossam’. In korea, bossam means covering something. Normally three foods are related. The one thing is lean pork inside. The pork was boiled well with special seasonings and sauses. The second thing is a kind of kimchi. It enhances the balanced taste and harmonized with the meat. The last one is the covering cabbage that makes you eat gracefully.

The first step is putting one cabbage leaf on your plate or on your hand. Put the pork meat and the kimchi on the cabbage. Now fold and cover the inside food with the cabbage completely. You should use a little bit smooth power. And put it in your mouth. While chewing the bossam, you will feel the harmonized taste like an orchestra.

The next one is buckwheat soba noodles. You can choose cold or hot soba, but you can feel the deeper taste of soup with the cold soba than the hot one. In the coldest winter, people normally order cold soba. I recommend that adding enough seaweed. It makes the taste of soup savory.

I will explain details about bossam in the future. There are many tasty bossam restaurants in Korea.

Oh, there is a one more menu on the left.

You may be curious about many other menus, but I think focusing on main menus would be good. The bossam and Buckwheat noodle (cold one).

Traditionally, it has been believed that buckwheat helps lower high fever and has a calming effect on the body. While discrimination these days may take different forms compared to the past, I believe that we can still exhibit patience and ultimately overcome it.
